BANANA MUFFINS

BANANA MUFFINS

300 g flour
(originally 150 g of flour and 150 g of bran)
1 tsp. baking powder
50 g dark brown sugar
50 g white sugar
45 g raisins
1/4 tbsp. salt
1 tbsp. butter
250 ml milk
1 tsp. sodium carbonate
1 big egg
4 pealed bananas (3 mashed and 1 sliced)
2 tbsp. light brown sugar

  • Preheat the oven to 180 degrees C.
  • Grease muffin pan or line it with paper muffin cups.
  • Mix flour (bran if you use it), baking powder, both sugars, raisins and salt.
  • Melt the butter.
  • Mix milk and  sodium carbonate.
  • Add butter and milk to the flour mix. Add eggs. Mix lightly.
  • Add mashed bananas.
  • Spoon the mixture into cups. Place a slice of banana on a top of each muffin. Sprinkle with brown sugar.
  • Bake for 25-30 min or till the top is golden brown and firm.
  • Cool for 5 min. Remove from the pan.
  • Serve at room temperature.
