300 g flour
100 g brown sugar
1 tbsp. baking powder
1/2 tsp. salt
60 g cold, diced butter
125 g milk
1 lightly beaten egg
90 g raisins

50 g brown sugar
1 tsp. ground cinnamon
1 tsp. ground allspice
1 tsp. ground ginger
3 tbsp. melted butter

1. Preheat the oven to 190 degree C. Grease and sift with flour a 23x23cm square pan.

2. In a bowl, sift flour, salt, baking powder, add sugar. Work in the butter, knead till crumble forms. Add egg, milk, and raisins. The dough must be sticky and thick.

3. Pour the dough in the pan, smooth out.

4. Make the glaze: mix sugar, cinnamon, pepper and ginger. Melt the butter. Sift the spice mix over the dough, then sprinckle with the melted butter.

5. Bake 30-40 min, or until it does not stick to a wooden pick.

6. Let the cake rest for 10 min in the pan.  Serve warm or cooled to room temperature.

P.S. The cake was very easy and quick to make, so it is perfect to make last minute before serving and it tasted the best still warm. And it got bit hard after cooling completely. But that did not spoil the taste. Especially good is the spicy topping though next time I would try to grind the brown sugar somehow as I think it would make the topping even better. And drizzle the butter all over the cake accurately.

Enjoy, K.

One Response to “SPICE CAKE”

  1. Your cake looks more soft than in the cook book. And looks really tasty.
