MOCHA FUDGE CAKE WITH CHOCOLATE ICING

FOR THE ICING
175 grams plain chocolate, melted
50 grams unsalted butter
150 ml double strength espresso
1 teaspoon vanilla essence
300 grams icing sugar

FOR THE CAKE
85 grams unsalted butter
300 grams plain flour
2 teaspoons baking powder
1 teaspoon vanilla essence
3 eggs, separated
125 ml milk
4 tablespoons instant coffee granules
280 grams caster sugar
85 grams plain chocolate
125 ml sour cream

1. Make the icing:
Melt the chocolate and the butter in a bowl over a pan of simmering water. Leave to cool, then lightly and gradually whisk in the coffee, vanilla essence and icing sugar to make a glossy icing. Cover and chill 3-4 hours.

2. Make the cake:
Preheat the oven to 180C. Grease and flour two 20cm x 4cm deep cake tins. Sift the flour and baking powder into a bowl. Stir the vanilla into the egg yolks. In a pan, heat half the milk to boiling point, then stir in the coffee to dissolve; stir into the rest of the milk and cool.

3. Cream the butter and 200grams of the caster sugar until light and fluffy. Slowly add the vanilla egg yolks, whisking between each addition, then mix in the melted chocolate. Using a spoon, fold in the sifted dry ingredients, followed by the cooled milk and sour cream.

4. Whisk the egg whites until stiff; fold in the remaining sugar and whisk to form glossy firm peaks. Using a metal spoon, carefully fold the egg whites into the cake mix and pour into the tins. Bake for 30 minutes until risen and a skewer comes out clean. Leave in the tin for 5-10 minutes, then turn out on to a wire rack.

5. Split each cake in two horizontally and use a little of the icing to layer them up. Spread the rest of the icing over the top and sides, swirling it with a knife.

P.S. Made this cake for my friends birthday party. It was a total winner, and paired with my home made ice-cream, it was just marvelous..

  2. Very, very, very tasty. And it really needs to be combined with ice-cream – the cake is very sweet.
