SPONGE CAKE WITH DELICIOUS LEMON CREAM..

FOR THE CAKE
100 g flour
1 tsp. baking powder
3 big eggs, separated
70 g sugar
1/4 tsp. salt

FOR THE LEMON CREAM
250 ml heavy whipping cream
200 g powdered sugar
120 g butter
finely grated 2 lemon peel and juice
2 big eggs + 1 big egg yolk
2 tbsp powdered sugar

FOR THE CANDID LEMON PEEL
2 lemons
300 ml water
280  g white sugar

TO MAKE THE SPONGE
1. Preheat the oven 190 degrees C. Grease 2 spring pans (23 cm), line them with baking paper.
2. Sift the flour and baking powder into a bowl.
3. Whip the egg yolks and sugar into thick cream.
4. Quickly whip the egg whites with salt in stiff peaks.
5. Add flour to egg yolk mix, then mix in the egg whites.
6. Pour the mix into the pans. Bake 20-25 min, till the top is golden brown.
7. Let the sponge rest for 5 min in the tins, then remove from the tins and leave to rest on the wire rack for about an hour.

TO MAKE THE CREAM
1. Make the lemon curd. Place sugar, butter, lemon peel and juice in hot water bath. Mix time to time till butter and sugar have melted.
2. Whip eggs in light foam, pour them through a sieve into the butter mix. Mix time to time till it gets thick and does not get off the spoon. Take of the heat and let it cool down for an hour.
3. Whip the cream, mix in the lemon curd.

TO MAKE THE CANDID LEMON PEEL
Peel the lemons with potato peeler in nice strips. Avoid the white part.
Bring water to a boil in a small pan, and add lemon peels. Boil for about 5 minutes, until tender. Remove peels from water, and stir in sugar. Return to a boil, add peels, and boil until transparent.
Drain, and allow to dry before storing. Liquid may be reserved and used as lemon simple syrup.

ASSEMBLE THE CAKE – place one of the layers on a plate, put the cream on it, place the other layer on top. Decorate with the rest of the cream and the candid lemon peel.
