SPONGE CAKE WITH STRAWBERRIES

FOR THE SPONGE
3 big eggs
100 g sugar
100 g flour
1 tsp. baking powder

FOR THE CREAM
450 g fresh strawberries
350 g mascarpone or cream cheese
30 g icing sugar

1. Preheat the oven to 220 degrees Celsius. Line a cake tin with parchment (23 cm).

2. Whip the eggs with the sugar into a creamy thick foam. Slowly add the flour, baking powder.

3. Pour the mix in the tin. Even it out. Bake for 8-12 min until golden brown and firm.

4. Let it rest in the tin for 5 min, then take it out of it, place on wire rack, take of the paper and cool at least for an hour.

5. Make the cream: smash 150 g of berries, others just slice.

6. Mix the cream with the sugar, add the mashed strawberries.

7. Cut the cake into two layers, place one of them on a plate, put the cream on it, layer with cut strawberries, place the other layer on top, put over the rest of the cream and decorate with the rest of the strawberries.

8. Keep in the fridge until serving.

P.S. I made this one for my mom”s birthday.. so had to make it pretty.. :) next time I want to play with food colouring.. cake was easy to make again.. and you can definitely go for any other berries that are in season!
