LEMON CAKE WITH RASPBERRIES

FOR THE CAKE
250 g soft butter
250 g sugar
finely grated peel of 2 lemons
4 big eggs
225 g flour
2 tsp. baking powder

FOR THE LEMON SYRUP
juice of 2 lemons
4 tbsp. powdered sugar

FOR THE FILLING
250 g heavy whipping cream
2 tbsp. powdered sugar
100 g raspberry jam

a handful of raspberries for decoration

1. Preheat the oven 180 degrees C. Butter 2 tins (20 cm) and line them with paper.

2. In a big bowl, mix butter, sugar and the lemon peel into light cream. Mix in the eggs one by one.

3. Slowly sift in the flour and baking powder. Fill the dough into the tins.

4. Bake for 30-40 min till firm. Take out of the tins and let rest on the wire rack.

5. Meanwhile, make the syrup, mix the lemon juice with the sugar.

6. While the cakes are still warm prick the cakes and then soak them with syrup. Cool the cakes completely.

7. Make the filling. Whip the cream and sugar firm.

8. Place one of the cakes on a plate, put the jam over it, then the cream and top with the other cake. Dust with powdered sugar and garnish with the raspberries.

P.S. Well, well, well.. I guess this is one of the best lemon cakes I have ever made. I did it for my friends birthday party and everybody absolutely loved it! Try it, its easy to make and super delicious!!!!
