MELBA CAKE WITH PEACHES..

FOR THE CAKE
250 g butter
250 g sugar
1 tsp. vanilla essence
4 big eggs
250 g plain flour
2 tsp. baking powder
1.5 tbsp. milk

FOR THE FILLING
100 g raspberry jam
8 peach halves, sliced

FOR THE CREAM
250 g heavy cream
1 tbsp. powdered sugar

powdered sugar for dusting

1. Preheat the oven to 180 degree Celsius. Butter and line 2 round cake tins (23cm).

2. Mix butter, sugar, vanilla light and fluffy. Mix in the eggs one by one.

3. Slowly mix in the flour and milk. Mix well. Divide in two and pour into the tins.

4. Bake for 30-40 min till golden brown. Let it rest in the tins for 10 min, then turn out and leave for an hour on the wire rack.

5. When cake is cold, whip up the cream with sugar.

6. Place one of the cakes on a plate, even the top in necessary, brush the cake with jam, place the peaches on top, then whipped cream. Place the other cake on the top, dust with powdered sugar!

P.S. We had such a nice little party last time and this was the cake! Easy and super tasty! Try, it is wonderful!
