RASPBERRY CHARLOTTE..

FOR THE BASE
3 big eggs
100 g sugar
100 g flour
1 tsp. baking powder

FOR THE SIDES
1 pg. Ladyfingers
raspberry liqueur or syrup

FOR THE FILLING
500 g heavy cream
2 tbsp. powdered sugar
300 g fresh raspberries
meringue (as it is the sweetener then use as much as you want)

TO MAKE THE BASE

1. Preheat the oven to 220 degrees Celsius. Line a cake tin with parchment (20 cm).

2. Whip the eggs with the sugar into a creamy thick foam. Slowly add the flour, baking powder.

3. Pour the mix in the tin. Even it out. Bake for 8-12 min until golden brown and firm.

4. Let it rest in the tin for 5 min, then take it out of it, place on wire rack, take of the paper and cool at least for an hour.

TO MAKE THE FILLING

5. Whip up the cream, mix in the raspberries that have been smashed, then break the meringue and mix in, taste for sweetness, if you want sweeter add more meringue.

TO ASSEMBLE THE CAKE

6. Place the sponge base on the bottom of a 20 cm tin with removable sides, then dip one side of the ladyfingers into the raspberry liqueur of syrup and place around the tin side, liquored side to the inside.

7. When you have made a full circle the place the whipped cream mix inside. Refrigerate before serving. Decorate with raspberries if you wish!

P.S. I made this cake for my friend’s birthday. The assembling in the book was too complicated, so I took the easy way out with the Ladyfingers. And I must admit the filling is divine, it’s just gorgeous! It is fresh and light and wonderful!
