CAKE WITH MASCARPONE CREAM AND RASPBERRIES..

FOR THE CAKE
200 g sugar
200 g soft butter
4 eggs
200 g plain flour
1.5 tsp. baking powder

FOR THE SYRUP
100 g sugar
1 tbsp. water
90 ml almond liquer

FOR THE CREAM
250 ml heavy whipping cream
250 g mascarpone
3 tbsp. sugar

300 g fresh raspberries
powdered sugar for dusting

1. Preheat the oven to 190 degrees C. Line and grease two spring pans (20cm).

2. Beat butter, sugar, eggs in a big bowl. Add flour and baking powder. Pour into the tins, even out.

3. Bake for 20-25 min till golden brown. Leave for 10 min in the tins, then remove from them and let to cool.

4. Make the syrup: heat slowly the water, sugar and almond liquer till the sugar melts. Let it cool down for 10 min.

5. Cut each cake into two layers and soak each with the syrup.

6. Make the cream: beat the cream; beat the mascarpone and sugar and mix in the whipped cream.

7. Place one layer on a plate, put over the cream, place some raspberries into the cream, top with next layer, put over the cream again, place some raspberries into the cream again. Place next layer, cream it and lace raspberries then place the last layer. Dust it with sugar and decorate with raspberries.

P.S. Hey, this cake was made some time ago, in September to be precise for my godfather’s birthday party! And I got my hands on these hybrid berries (strawberry + raspberry), they are very interesting, I recommend to try!
