WALNUT CAKE WITH COFFEE CREAM..

FOR THE CAKE005 copy
250 g softened butter
250 g sugar
4 big eggs
225 g plain flour
2 tsp. baking powder
3 tbsp. strong coffee
75 g crushed walnuts

FOR THE CREAM
250 g mascarpone
150 ml heavy whipping cream
60 ml coffee liquer or strong coffee
2 tbsp. sugar
1/2 tsp. vanilla essence

cocoa powder for dusting
walnuts for decorating

1. Pre-heat the oven to 180 degrees C. Line and grease two tins (20 cm).

2. Mix butter with sugar light and fluffy, add eggs and mix well. Add coffee, flour, baking powder, walnuts.

3. Pour the dough into the tins. Bake for 25-35 min, till golden brown and firm. Let it rest for 10 min in the tin, then place on a wire rack, remove the paper and let it cool for an hour.

4. Make the cream: cream mascarpone, slowly add whipped cream, coffee, sugar and vanilla.

5. Place one layer of the cake on a plate, put half of the cream, top with the other cake, ice with the rest of the cream. Dust with cacao, decorate with nuts.

P.S. Mmmm.. this was soooo delicious.. next time I would totally add more coffee..
