CHOCOLATE PEPPERMINT MUFFINS..mdrmt

FOR THE MUFFINS
300 g plain flour
75 g cacao
2 tsp. baking powder
1/4 tsp. salt
150 g softened butter
300 g sugar
3 eggs
180 ml milk
1 tsp. peppermint extract or more to your liking
12 chopped chocolate candies with peppermint filling (After Eight or similar)

FOR THE GLAZE
200 g bitter chocolate
125 g butter
1 tsp. peppermint extract or more to your liking

1. Preheat the oven 180 degrees Celsius. Line muffin pan with papers.

2. Cream butter with sugar, add eggs one by one. Add flour, cacao, baking powder, salt and milk. Add peppermint extract and candy.

3. Spoon the mixture into muffin pan.

4. Bake for 20 -30 min till the top is firm.

5. Cool down completely.

6. Make the glaze: melt the chocolate and butter in hot water bath. Add peppermint extract.

7. Drizzle over the muffins.
