CAKE WITH WHITE CHOCOLATE COFFEE CREAM

FOR THE CAKECapture
250 g butter
250 g sugar
1 tsp. vanilla essence
4 big eggs
250 g plain flour
2 tsp. baking powder
1.5 tbsp. milk

FOR THE TRUFFLES
120 g chopped dark chocolate
2 tbsp. heavy whipping cream
2 tsp. instant coffee
1/2 tsp. coffee liqueur

FOR THE CREAM
300 g chopped white chocolate
180 ml heavy whipping cream
430 g soft butter
150 g powdered sugar
1 tbsp. instant coffee
  that has been dissolved in
  1 tbsp hot water

120 g chopped roasted hazelnuts
cacao for dusting

MAKE THE CAKE:
1. Preheat the oven to 180 degree Celsius. Butter and line 2 round cake tins (23cm).
2. Mix butter, sugar, vanilla light and fluffy. Mix in the eggs one by one.
3. Slowly mix in the flour and milk. Mix well. Divide in two and pour into the tins.
4. Bake for 30-40 min till golden brown. Let it rest in the tins for 10 min, then turn out and leave for an hour on the wire rack.
5. When cake is cold, whip up the cream with sugar.

MAKE THE TRUFFLES:
6. Melt the chocolate with cream in hot water bath. Set aside.
7. Dissolve the coffee in the liqueur and mix into the chocolate. Let it rest in a fridge for an hour or till it is set and thick.
8. Make truffles (app. a teaspoon of mixture each, should make 12 truffles). Place on a dish covered with baking paper. Put a film over and leave to harden.

MAKE THE CREAM:
9. Melt the chocolate with cream in hot water bath. Set aside.
10. Whip the butter light and fluffy in a big bowl, slowly add powdered sugar, add chocolate and coffee.

11. Place one of the cakes on a plate, ice with 1/4 of the cream, top with the other layer of cake, ice the top and sides with the rest of the cream.
12. Decorate the sides with hazelnuts, the top with the truffles and cacao.

P.S. Hey hey.. had a bit of holidays that gave me so much time for making cakes.. just need time for posting now. :)

This particular cake was made already some time ago for a party, I must warn you – it is a bomb, definitely not recommended for people with weak nervous system..
