THE LIGHT AND EASY APPLE TART

375 g puff pastry005 copy
5 peeled and thinly sliced apples
fresh juice of 1 lemon
2 tbsp. cubed butter
2 tbsp. sugar
cinnamon
4 tbsp. apricot jam

1. Preheat the oven to 220 degrees C. Line a 30 cm tin with baking paper.
2. Roll the pastry out to 36 cm diameter. Place in the tin, fold the sides double to make nice basket.
3. Sprinkle the apples in lemon juice and place on the pastry. Dot it with butter, dust with sugar and cinnamon.
4. Bake for 15-20 min till the apples are soft and the pastry crunchy.
5. Heat up the apricot jam, whisk over the apples. Serve hot!
