FOR THE CRUST:whiteChocolateBerryTart_460x260
250 g nuts (hazel nuts, almonds, walnuts, etc.)
1 small pinch salt
1 tbsp. sugar
6 tbsp. butter, melted

300 g white chocolate
250 g cream cheese
60 ml heavy whipping cream
150 g strawberries
100 g blueberries
100 g raspberries

1. Prepare 20 cm tart tin.Preheat oven to 180 degrees C.
2. Make the crust: put nuts, salt and sugar in a food processor and pulse until ground. Mix in the melted butter.
3. Press the mix evenly into the tin. Make sure it is even. Bake for 12-15 min. It might be still a bit soft when it comes out of the oven, but it will get firm when it gets cold. Cool completely before filling!!!
4. Make the filling: melt the chocolate in a hot water bath. Beat the chocolate with cream. Add cream cheese and beat until smooth. Spread over the crust. Arrange berries as you please.


P.S. As the berry season is coming closer, I thought it would be great to share this recipe, I have made it several times with various toppings, but the berries of course are the best as it freshens up the taste.

The butterfly version was made for my friends first week wedding party.. :) The butterflies were originally meant for their wedding cake, but they arrived too late, so I just had to make a cake the week after. You can find the printed waffle butterflies here:
